ABSTRACT
This chapter aims to summarize the most relevant aspects of freshwater crayfish aquaculture and astaciculture and to update crustacean’s welfare which has recently been receiving great attention from both social entities and science, in order to provide the reader with a complete perspective of the state of the art in the sector, its critical issues and potential. This chapter does not claim to cover all aspects related to the aquaculture of crayfish, but rather aims at being an update of the knowledge in this area and an indication of the most important aspects that distinguish this production sector and which must be taken into consideration by anyone who wants to approach this world.
