ABSTRACT

Quality is maintained in Canadian bread wheats by the Canadian grading system. All wheat initially is examined visually by the elevator agent upon delivery to a country elevator and subseguently by Canadian Grain Commission inspectors as it arrives at terminal elevators and upon discharge into cargoes. The visual examination includes the degree of soundness of the wheat which includes many factors such as sprouting, immaturity, frost and mildew. Wheats grown in eastern Canada are generally softer and used primarily for domestic consumption. Wheats of the same grade and class are then binned together in the elevator, loaded onto boxcars and moved to the terminal elevator. In the 1985-1986 crop year, a large scale monitoring operation was initiated in which all lots of wheat moving to terminal elevators were analyzed by the Falling Number method after compositing by grade, class and primary elevator location.
