ABSTRACT

Dimethyl dicarbonate (DEDC) and dimethyl dicarbonate (DMDC) are chemical sterilants that are used to control microbial populations in food products. This chapter first outlines the chemical composition, inactivation mechanism, and optimal storage and usage conditions. DEDC and DMDC are chemical processing aids that have strict regulations for use in food and beverage products due to varying degrees of toxicity. DEDC and DMDC are known to be effective at inactivating yeast, molds, and bacteria in food products (fruits and vegetables), alcoholic beverages (wine and beer), fruit juices, and soft drinks. This chapter explores the effectiveness of various dosing concentrations in a wide application of studies, including combination treatments with thermal and non-thermal processes.
