ABSTRACT

This chapter deals with the applications of proteomics analytical tools in the food industry with comprehensive approaches, such as proteomics analytical tools used to authenticate whether the food or food products abide by product-labeling policies and toxins in food products; and to understand variations in food nutrients as a consequence of food adulteration. The combination of liquid chromatography (LC) with mass spectrometry (MS) has made it possible to identify and quantify large numbers of biomolecules without requiring labeling. LC-MS/MS is among the most advanced analytical instruments for the qualitative, quantitative, and functional characterization of food items. Food safety depends on a web of food analyses to monitor the food supply chain. MS has a proven track record of enabling food-testing laboratories to identify and characterize foreign compounds. The LC-MS/MS analysis coupled with combinatorial peptide ligand libraries was applied to ensure the quality of the commercial liqueur, declared to be from a plant source.
