ABSTRACT

The disposal of dairy wastes directly to the stream or land can cause environmental problems. High pollution load of dairy wastewater that disposed directly to the stream can causing eutrophication that reduce oxygen in the water. Dairy wastes contain organic compound that mainly consists of protein, fat, and lactose with small amount of fiber, other solids, and minerals. The organic compound contained in dairy wastes should be utilized so it can provide benefit and able to reduce the environmental problems. Raw milk processed into various products like butter, cheese, yogurt, condensed milk and milk powder involving processes such as chilling, pasteurization, and homogenization so that resulting various physical-chemical characteristics on the wastes. Microflora of dairy industry wastes will depend on the biochemical properties and the physical-chemical conditions, which affect the optimum metabolic activity of the microorganisms. Microorganisms have a role in the degradation of lipid or fat in dairy wastewater through enzymatic approach.
