ABSTRACT

In order to understand the accidents in the production process of catering workers, the description data of the process of work in the catering industry report of liability insurance of work safety are collected. A scenario of work safety accidents is constructed. Based on the model, scenario elements in each record data are extracted. Injured persons, types of injuries, related devices, and related media are classified. The occurrence frequency of injured persons, injured parts, injury forms, related devices, related media and the accident site are statistically analyzed. In addition, the network correlation analysis is carried out for the risk scenario elements of customers and employees respectively. The results show that customers are mainly in the stairwell, restaurant dining area and toilet falls, bruises and other bodily injuries out of control injuries. And employees are mainly injured by cutting, scratching, pressing and other equipment in the kitchen operating space. Finally, the possible causes and scenarios of different injury types were analyzed, and corresponding accident prevention suggestions were proposed.
