ABSTRACT

Mulberry fruits are rich in nutrients and have high health benefits. Mulberry fruits are mainly distributed in the Pearl River Basin, the middle and lower regions of the Yangtze River, and the lower stream region of the Yellow River, Sichuan, and Xinjiang Province in China. Currently, the popular mulberry products are mainly mulberry juice, mulberry wine, mulberry fruit powder, mulberry yogurt, mulberry fruit vinegar, and mulberry jam. Mulberries can be produced into snacks that are easier to carry, light, and easy to eat with nutrients. In addition, with the development of breeding technology, many high-yield and high-quality mulberries have been successfully cultivated. With high yield and large fruit shape, they are suitable for large-scale planting and industrial processing and have a good potential market value. In the future, the processing and utilization of the mulberry fruits, as a new health type of fruit resource, should be a new health food product, in line with modern consumers’ lifestyles and consumption habits.
