ABSTRACT

Cereals are crops grown primarily for their edible starchy seeds, and such crops constitute the world’s major sources of food for humans and feed for livestock. The major uses of cereals vary widely throughout the world. Rice and wheat, although used to some extent for feed, are primarily considered as food grains. Characteristics of some cereals significantly affect their usage. Specific uses of cereals are extremely numerous and diverse and as previously indicated, vary widely throughout the world. Millet and sorghum are grown as food crops primarily along the edges of the deserts of Africa and Asia where lack of rainfall prohibits the production of other cereals. Wild rice is produced on a limited area in North America. Rice also has a nonsticky characteristic which permits the grains to remain free following cooking.
