ABSTRACT

Evaporation in the milk powder industry means a process in which part of the water is removed from the liquid milk by boiling to such an extent that the resulting concentrate still is easily pumpable. The task of the dairy industry is to ensure the regular supply of milk products to the population. The evaporator with mechanical film creation appeared in the dairy industry after World War II, and it brought a considerable improvement of the concentrate quality together with an increased concentration. The drying gas used in the milk industry is atmospheric air, heated to provide the necessary heat for evaporation. The evaporation of water proceeds under adiabatic conditions. In such a system all sensible heat given up by the drying air is utilized for evaporation of water, which becomes a part of the drying air.
