ABSTRACT

A bioactive compound is an essential or non-essential compound that is found in nature and influences cellular activity, as well as in different physiological mechanisms (Biesalski et al., 2009). The National Institute of Cancer mentions that bioactive substances are able to provide and promote good health. These substances can be found in small quantities in plants and in some foods like fruits, vegetables, nuts, oils and grains. The bioactive compounds have a very important value inside the cosmetic, pharmaceutical and food industries. In the past, a great number of these products were used for the treatment of different illnesses. According to Ros et al., the vegetal material contains bioactive, aromatic and fatty compounds, vitamins, gelling materials, oils, flavors and aromas. With this background, it is interesting to transform by-products, residues and waste into products that generate economic and environmental benefits.
