ABSTRACT

Root crops are major staple food crops in many parts of Nigeria; however, storage and processing methods are still farm from satisfactory. Traditional methods of storage and processing of yams (Dioscorea spp.), sweet potato (Ipomea batatas) and cocoyam (Colocasia and Xanthosoma spp.) have been reviewed. Ways of improving the efficiency of these traditional methods by the adaptation of modern and improved technologies have been proposed, and their socioeconomic implications discussed.
