ABSTRACT

The inhibitory efficiency was evaluated by the difference in values of the induction period under the RH oxidation in the presence and the absence of test additions, attributed to the induction period of the RH oxidation. An analysis of the experimental data confirms the notion that the contribution of a separate intermediate stage of the oxidation process in the result depends essentially on the ratio of the reaction rates of all its components. The results of the studying the inhibitory efficiency of components of the plant cells in the oxidative processes indicate a complex and ambiguous mechanism of the oxidation of the model substrate in their presence. An important component of plant cells are sterols, which play a substantial role in their metabolism and have lately been used as a dietary supplement. In addition, the plant sterols and α-tocopherol belong to biologically active compounds, which play an important role among the components of the plant cells.
