ABSTRACT

The lack of food around the world is a reality and affects many countries. However, this lack is often associated with unequal distribution and factors associated with the postharvest management of fruits, vegetables, cereals, and grains. This chapter describes the possible causes and effects associated with the losses of agricultural products in the Mexican market. We hope the information provided here will help to create awareness of all the losses that are occurring in fruits, vegetables, and grains. Many of these problems can be avoided so that edible food that is currently being lost may be saved. One of causes of unnecessary loss is the high-quality standards that have been established at the present time. The objective of this chapter is to disseminate information related to the factors associated with food losses during postharvest in México. We hope this information will help everyone visualize possible alternatives to these food wastes such as using them as a source for obtaining bioactive compounds.
