ABSTRACT

Lactating farm animals can be exposed to a large number of environmental compounds that can act as toxicants. Such compounds can be present in the air, water, and feed or can be directly administered to livestock in order to avoid pests. Even at ultra-trace levels, such compounds can be transferred to milk and processed dairy products. Among environmental contaminants, several classes belonging to persistent organic pollutants, pesticides, and polycyclic aromatic hydrocarbons are of particular concern for human health safety. In this chapter, the description, regulation, and analytical procedures related to the main classes of environmental contaminants in milk and dairy food are reported.
