ABSTRACT

Growing perception concerning the relationship of diet with health has extended the necessity for exploring biologically active components present in the native foods. In this perspective, the bioactive ingredients from milk and milk products are considered as rational and sustainable approach due to their physiological functions. Milk is a good source of important bioactive components including proteins, peptides, carbohydrates (lactose), lipids, minerals, vitamins, growth factors, and enzymes. These active molecules perform various physiological functions in the body such as antihypertension, anti-inflammatory, antioxidant, antibacterial, antitumor, weight management, improve immunity; reduce infections and cholesterol, osteoporosis, and diabetes. In this chapter, different milk bioactive components have been discussed with great focus on their physiological role in the body.
