ABSTRACT

In the process of extraction of the konjac glucomannan (KGM) or purification of konjac flour, the drying process is very important. In dry extraction, the konjac tuber is sliced into thin chips and dried to the moisture content of 8%–10% wb (wet basis), then it is ground into powder and sieved to remove starch and some impurities. The procedure is illustrated in Figure 8.1. Dry processing of konjac flour. https://s3-euw1-ap-pe-df-pch-content-public-p.s3.eu-west-1.amazonaws.com/9780429429927/711a47e9-6126-402c-b26d-00ae647fe3c2/content/fig8_1_B.tif"/> (From Shimizu, N., and Shimahara, H., U.S. Patent No. 3767424, 1973.)
