ABSTRACT

An Artificial Neural Network (ANN) is an information processing paradigm that is inspired by the way biological nervous systems, such as the brain, process information. High-pressure processing is a very effective food processing technology in the preservation of food products which retains the nutritional quality and enhances the value of the product. ANNs are a powerful tool for simulating various nonlinear systems and can be applied to many complex problems associated with food processing. The application of the backpropagation technique to a food process modelling problem requires three simple steps: Network design, learning or training and usage. The ANN is better than other modelling techniques because it implements experimental data to develop the model with high accuracy and solve problems related to the food processing industry. ANN modelling is a newly developed strategy and an alternative to conventional modeling techniques.
