ABSTRACT

Nowadays, high-performance liquid chromatography (HPLC) coupled with tandem mass spectrometry (MS/MS) detection has been demonstrated to be a powerful technique for the identification and quantification of a wide range of xenobiotics in different biosamples, especially in studies related to environmental and medical fields. This chapter provides a comprehensive review of HPLC-MS/MS as a method of identification and quantification of environmental bioindicator residues in food, environmental, and biological samples from different points of view. The issue concerning food quality and authenticity is directly connected with a guarantee of food safety and its compliance with food legislation. This complex topic is extremely important for institutions, regulatory laboratories, industries, and agencies related to a wide spectrum of food science and technology. Analysis of complex samples such as food and nutrition can only be conducted by a large number of advanced analytical technologies.
