ABSTRACT

Microorganisms act as a potential source for the production of different value-added products like enzymes, nutraceuticals, etc. An emerging as well as an important area of research is the food development, food bioprocessing, nutraceuticals, biocolors and bioflavors using microbes. Large scale use and production of nutraceuticals has been restricted due to supply limitations and extraction difficulties. The study provides a comprehensive overview of the role of microorganisms in cellular machinery used for the process intensification. For the production of different nutraceuticals, it may also prove to be an environment friendly alternative approach. Metabolic genes form an integral part in the development of genetic engineering of food-grade microorganisms. Microbial cell factories are designed for the production of nutraceuticals through the application of metabolic engineering. Nutraceuticals form an essential ingredient during the designing of different value-added functional foods. These innovative technologies may serve as a pillar for the process intensification of such compounds.
