ABSTRACT

This chapter argues that a human rights approach that foregrounds food equality, affordability, and accessibility is fundamental to achieving a food system that is healthy and sustainable. A food system policy approach presents opportunities for cost savings by creating synergies across the food system to achieve the transformation needed for a sustainable and just food system. The chapter focuses on the UK context and discusses current actions taken to transform the UK food system in England, Scotland and Wales. In Scotland, for example, due in part to the highly-organised work of civil society, there is pressure to develop policies and practices that shift the food system from a market-based approach to a rights-based approach to food. Government policies that address these concepts and support activity to build a more structurally complex and diverse supply chain can support a more resilient food system.
