ABSTRACT

Coffee is among the most desired agricultural products worldwide. It forms an important part of the Colombian economy as a characteristic agricultural chain in the Nariño, Norte de Santander, Antioquia, Valle del Cauca, Cundinamarca, Huila, Cauca, Tolima, Caldas, Quindío, and Risaralda departments, the last three of which are known as the Coffee Axis. Additionally, flavonoids, together with the phenolic acids and tannins present in the coffee, create a compositional complex that provides greater functionality, such as antioxidants and flavors, to the coffee beverage. In terms of commercial coffee varieties and sensorial attributes, the Arabica variety is characterized by its sweet and caramel notes, while Robusta coffee provides spicy, coarse, earthy notes to the coffee beverage. Barism is an experimental discipline, in which different coffee methods, types of milk, flavorings, and liquors are added to coffee to obtain unique and distinctive flavors in each cup, with an artistic or decorative presentation.
