ABSTRACT

Bioactive peptides (BAPs) have health-promoting properties and play a positive role by preventing diseases and modulation of physiological systems by different functional properties that are identified for them. This chapter gives an overview of BAPs. It provides basic information such as definition and properties of BAPs as well as their applications, resources and production approaches. This is followed by descriptions of strain selections and strain improvements and the challenges during BAPs production processes. Furthermore, strain selection methods in microalgae as a future food resource and bacteria have been briefly discussed. Finally, two approaches of chemometrics and cheminformatics are discussed, which are used to predict and design better BAPs and serve as good product models in decreasing time and cost of studies.
