ABSTRACT

Dairy and non-dairy fermented products are good source of bioactive peptides. Around the world, various dairy products are included in the common diet. This chapter begins with the introduction of the two milk proteins: casein and whey proteins and their potential health benefits. Further, we have provided details about bioactive peptides derived from fermented dairy products such as fermented milk, yogurt, kefir and cheese. Many of these fermented products are rich in beneficial bacteria and may serve as a source for probiotics. Finally, we have provided a brief overview of selective bioactive peptides derived from fermented non-dairy sources such as soybean and rapeseed fermented products and their health benefits.
