ABSTRACT

Food fraud is an economically motivated adulteration of food by intentional altering, mislabeling, misbranding, substituting, or tampering for economic gain. With food fraud incidents increasing and occurring in a global scale, there is a growing concern for food safety and quality. Furthermore, the complex, opaque, and fragmented global food supply chain has opened the door to food fraud on a much larger scale. As consumers are more aware, they want transparency in food – they want to know what they are eating is what it says on the label. This chapter examines the problems related to food fraud and supply chain in the honey industry. HoneyBlock is a fictional organization proposing the development of a platform leveraging blockchain technology to combat honey adulteration by providing traceability and transparency in the honey supply chain, from bee farm to table.
