ABSTRACT

The choice of a particular form of processing depends on the requirements of the technology, the kind and size of the material, and the technical potential to the producer. The economic and marketing aspects are also of great importance. The main objective of preliminary processing is the full or partial separation of edible parts from inedible ones. The decrease in the mass of the raw material affords economy in the transport of the semiproduct or the final product. Preliminary processing of a raw material the meat of which is nutritive and tasty, but looks unattractive or unknown to the consumer, allows it to enter the market. The main purpose of washing is the reduction of fish contamination with bacteria. The head of the fish accounts for a large proportion of its weight; deheading is thus necessary also from the point of view of reducing the mass of the material, the more so as the head is not fit for human consumption.
