ABSTRACT

Biofortification of wheat with micronutrients can be one of the sustainable and cost-effective strategies to tackle zinc, iron, iodine, and selenium deficiencies to prevent malnutrition among target population. Anthocyanin biofortified colored wheat has also created interest in industry due to its antioxidant and anti-inflammatory activity. HarvestPlus has been developed as a worldwide leader in generating biofortified staple foods to diminish micronutrient malnutrition. In this chapter, methods of biofortification and strategies for wheat biofortification with micronutrients are detailed.
