ABSTRACT

The rich nutritional profile of maize makes it unique among other cereal grains. It has a number of health benefits, such as high levels of antioxidants, dietary fiber, lipids with unsaturated fatty acid, antioxidants, vitamins, and minerals. The chemical characteristics of maize kernels are affected by variety and age of maize plant, heredity conditions, surrounding conditions, geographic location, and others. The maize protein has numerous functional properties, which make it suitable to food processors and for human nutrition. This chapter presents detailed information about the bioactive and nutritional properties of maize.
