ABSTRACT

Chia (Salvia hispanica) is an oilseed plant, which contains natural polyphenols, omega-3 fatty acids mainly α-linolenic acid, high-quality proteins, dietary fibers, vitamins, and minerals. Because of its rich nutritional composition and health benefits, it has grabbed attention of many food industries and educators and has been used in the production of various food products (such as cakes, pasta, ice cream, chips, etc.). Chia can be considered a functional food because of health beneficial effects to prevent many diseases. This chapter focuses on nutritional composition and potential health benefits of chia.
