ABSTRACT

Ripeness sensors that can be used for ripeness monitoring of fruits and vegetables could be as a sensor or an indicator where this device has the ability to detect the ripeness level of fruits and vegetables related to freshness and firmness conditions of the fruits and vegetables. This device is introduced into the packaging, as it has intelligent functions to monitor ripeness or freshness of fruits and vegetables, commonly it is called intelligent or smart packaging. The sensors can be created based on various sensor types, designs, and constructions for ripeness monitoring of fruits and vegetables that reflects food quality in term of ripeness level, freshness, and consumer preferences, e.g., crunchiness, firmness, juiciness, aroma, etc., which are discussed with the addition of RFID and nanosensors as the emerging technology in this field. This chapter describes the different concepts of the ripeness sensor, including freshness for fruits and vegetables. This technology has the potential to improve food freshness, shelf-life, and quality control throughout the supply chain and distribution system. Since it is dedicated to meet the need for desired ripeness, freshness, longer shelf-life, and quality as well as the safety of fruits and vegetables. Moreover, the device will be able to directly communicate to consumers using sensors or indicators that provide visual information on ripeness, freshness, and quality of fruits and vegetables. Thus, this device acts as active labeling for real-time shelf-life monitoring combining with the traditional inspection, which in turn, lowering fruits and vegetables lost.
