ABSTRACT

Sensing and biosensing methods are very broad fields of research that have a great impact on health, environmental quality control, and food quality. The aim of this chapter is limited to (bio)sensor technologies developed in the very last year exactly for screening quality control of vegetables and fruits. The chapter covers the fundamental principles and types of electrochemical (bio)sensors designs that are testified for vegetables and fruits-specific applications. Furthermore, the integration of nanotechnology into electrochemical biosensors design was also investigated.
