ABSTRACT

Nourishing oneself with healthy, nutrient-dense foods is one of the most important factors in living a vibrant life. In fact, poor diet is considered as one of the top three modifiable risk factors in preventing chronic diseases that plague the United States. The nutrition needs of women, both directly and indirectly, shape the health of the entire society. Women have unique needs and health risks; they often define the eating habits of their families, and they have the incredible responsibility of growing and nourishing the next generation. Evidence shows that eating predominantly whole plant-based foods including vegetables, fruits, legumes, whole grains, nuts, and seeds is best for optimal health throughout the life span.

This chapter reviews foundational concepts of nutrition, national and global nutrition recommendations, and nutrition needs specific to women in all stages of life. It also covers strategies for transitioning to a whole food, plant-based eating pattern.
