ABSTRACT

Nanoemulsions (NEs) are novel drug delivery or biphasic systems of two immiscible liquids, oil and water which may be classified into oil-in-water (o/w) or water-in-oil (o/w) NE. Bioactive materials can be loaded into the NE before or after homogenization and requires the surfactants having high potential for the stabilization of the NE by reducing the interfacial tension of two phases. This chapter mainly highlights the general understanding about the interfacial characterization of NE.
