ABSTRACT

Food packaging is very importance in the food supply chain and has a vital role in food processing and distribution. Its existence makes our lives easier and safer. Food packaging is the process of protecting food from the external environment by sealing it. The main functions of food packaging include protection, communication, convenience, and containment. The consumer demands and the present complex environment have taken the packaging to the next level such as active packaging and intelligent packaging. Active packaging is defined as the insertion of active agents for the advancement of product quality and extension of shelf life. It is correlated between the package, the food product, and environment, which helps the preservation of food products. Some food products contain flavors that are volatile, chemically unstable, and easily prone to degradation. All these along with meat and poultry may undergo oxidative degradation, which results in flavor and color deterioration. This chapter includes the different types of active packaging techniques, intelligent packaging techniques, and their applications. It also includes the active packaging techniques that provide flavor retention and color retention of the food product.
