ABSTRACT

Amino acids are subunits of peptides. There are different methods for producing these amino acid units (extraction from protein-hydrolysates, chemical synthesis, microbial process). There are also different methods for the modern production of peptides, for example, solid-phase peptide synthesis; peptides obtained by this method may differ according to their amino acid properties. Each feature of amino acids affects the characteristics whose peptides will be formed by peptide bonds. In this chapter, the amino acid C- and N-terminal protection groups, and information on peptide production are mentioned, in particular. Finally future perspectives are given about the studies of amino acids.
