ABSTRACT

Non-starch polysaccharides have been extracted from cereals using conventional and emerging technologies. Most of the conventional extraction 72methods involve heating. Pulsed electric fields (PEF) is a non-thermal technology that has been used in the food industry, and it is a promissory alternative to thermal polysaccharide extraction. The application of PEF for polysaccharides extraction has been scarcely reported. Existing reports show that PEF can improve the extraction of these compounds from cereals, and it can be considered as an assistive technology for extraction processes.
