ABSTRACT

Celluclast® is an industrial enzyme preparation that is commonly used in the food and biorefinery industries. Recently, Celluclast® has played an important role in the extraction of pectin from various raw materials. This review is 84focused on the analysis of research works using Celluclast® to extract pectic substances from kiwifruit pomace. To date, a total of four papers were found with reference to the use of Celluclast® for pectin extraction. Kiwifruit pectin yield obtained with Celluclast® was lower than those found for other raw materials such as apple pomace or artichoke pomaces. Works on kiwifruit pectins are limited and more research on this topic needs to be carried out.
