ABSTRACT

This chapter discusses the importance of health risks arising from contaminated foods that may cause several illnesses and can be fatal to human health. Food contamination can occur at any phase of food chain from crop cultivation to its arrival on the kitchen table. USFDA, ISO, and Codex Alimentarius Commission have come up with recommendations, regulations, and safety standards to avoid food contamination. The chapter also includes agents (chemical/physical/biological) that can boost or promote this contamination due to contaminated resources, such as soil, water, and air.
