ABSTRACT
Good volume of the fluid milk is converted to value-added traditional Indian dairy products, which help the dairy industry in product diversification and profit augmentation. Organized manufacture of these products entails mechanization and controlled production for uniform quality and safety of a product. Several efforts have been reported for the mechanical production and process upgradation of different classes of traditional dairy products, which have been reviewed in this chapter.
