ABSTRACT

Oilseeds (groundnut, rapeseed, safflower, sesame, and soybean) need proper care and handling during storage. Several techniques have been adopted to reduce the deterioration of oilseeds, such as the surrounding environmental conditions, controlling gaseous composition, modified atmosphere packaging (MAP), vacuum packaging, and ozonation. Ozone alone or in combination with other treatments has a promising role in maintaining the stability of food crops. The factors related to ozonation to enhance the shelf-life of oilseeds are discussed in this chapter.
