Ultrasonic is one of the upcoming technologies, which saves time, has non-destructive applications. Sonication is a non-thermal technology with a frequency of sound waves >18 kHz. In many fields of food technology, the ultrasound sound is used in crystallization, freezing, bleaching, degassing, etc. Ultrasound is also for food processing to increase the shelf-life of foods and to make the food taste better. It offers advantages, such as productivity, yield, better quality product, less time, economical, and eco-friendly.
