ABSTRACT

The food market is experiencing about 30% losses of fruits and vegetables due to a lack of scientific cold storage infrastructure. Thermoelectric devices have the edge over vapor compression refrigeration system (VCRS) in terms of its low cost, the higher level of compactness, noiselessness, and environment friendliness. This chapter illustrates the principle of thermoelectric refrigeration along with structure, material of module, and working of various prototypes as environmental friendly refrigeration technology. Thermoelectric refrigeration technology has a wider scope for application in cold preservation of fruits and vegetables during transit. The developed system will contribute to the mitigation of environmental hazards caused by emissions from the VCRS and to facilitate cold chain management of perishable commodities.
