ABSTRACT

The encapsulation is a process of enclosing the substances within an inert material to protect from unwanted reactions and degradation. Two advanced techniques of encapsulation are nanoencapsulation and microencapsulation. Microencapsulation can be done by spray drying, spray chilling, spray cooling, extrusion, vacuum encapsulation, electrostatic encapsulation, air suspension. The microencapsulation has applications in the food industry, agriculture, biotechnology, the pharmaceutical industry. This chapter focuses on different techniques of encapsulation and their importance in the food, pharmaceutical, and the agricultural sectors.
