ABSTRACT

The origins and development of Thai cuisine are explored. Literature on Thai gastronomy is found to be mostly from foreign visitors to the country and later with monarchs and royal family members. Origins of the world-famous dishes, such as massaman curry, padthai, and tom-yum-koong, are discussed. Many ethnic groups have influenced Thai cuisine as the country was in the route of Maritime Silk Roads. The royal court has been the center of recipes innovation and is still being used as a reference. Recently, there has been international attention to Thai street food and an effort from the government to promote Thai restaurants overseas.
