ABSTRACT

Three-dimensional (3D) food printing involves the layer-by-layer deposition of food materials in a predefined way using digitally controlled specialized printers that enables the creation of innovative food products. This technique not only provides a solution for artistic food design but also offers several other benefits, such as food products with personalized nutrition, automation of food manufacturing process, easiness of designing prototypes of innovative food products, etc. This chapter provides a brief overview of various aspects of 3D printing of food products.
