ABSTRACT

Unlike the conventional labor-intensive, destructive, and time-consuming procedures, imaging spectroscopy provides reliable, highly efficient, non-destructive, and rapid determination of food quality and safety. Among the various spectroscopic imaging techniques, Terahertz (THz) spectroscopy in the food industry is safe for human operation and consumption. The limitations of this method are: penetration depth, limited sensitivity, scattering effect, and lower detection limit. This chapter gives an insight on the basics of THz spectroscopy with special emphasis on its applications in the food industry.
