ABSTRACT

Composite dairy products are very beneficial for human health in terms of overall acceptability as well as nutritional point of view. Fermentation increases the bioavailability of nutrients and increases product palatability. Further, milk has all essential nutrients, though certain nutrients are lacking in milk, such as dietary fiber, iron, vitamin C, etc. Fermentation of milk and the cereals help in the growth of probiotics, which exert a beneficial effect, on gut and overall health of the host. Composite products are based on the dairy and non-dairy ingredients and are considered nutritious and are good carriers for the probiotics. Recently, more emphasis is on millets, also known as nutria cereals.
