ABSTRACT

Food safety management systems (FSMS) and regulations in the food and dairy sectors have been established with several revisions with a purpose to reduce risks and contamination hazards and concerns on food safety. These past and present situations have raised many questions to the regulators on the efficiency and effectiveness of these mechanisms to prevent food safety hazards. This chapter focuses on the current FSMS and practices to ensure food safety. The chapter also provides an advanced understanding on efficient implementation of food safety systems.
