ABSTRACT

Although gluten-free diet (GFD) is currently the efficacious therapy for celiac disease (CD), yet GFD has been shown to be responsible: for deficiencies in macro- and micronutrients. Pseudocereals are naturally gluten-free crops, which may be healthier alternative for GFD. The authors of this chapter have described the nutritional characteristics of pseudocereals and their use in the treatment of CD. The aim of this chapter is to highlight the properties of GFD to support its use as a potential healthier strategy in CD management.
