ABSTRACT

Soybean is the most abundant known source of protein, isoflavone, dietary fiber (DF) and fatty acids especially alpha-linolenic acid (ALA). These functional ingredients have a diverse range of biological activities, such as isoflavone, which is essential for their estrogenic and hypocholesterolemic activities, improves digestive tract function, prevents cancer, improves lipid metabolism and bone health. Whereas, ALA is an essential fatty acid for its hypotriglyceridemic effect and improves heart health. However, protein also shows hypocholesterolemic, antiatherogenic effects and reduces body fat. Dietary fiber also plays its part by not only controlling the blood pressure but also aid in the reduction of blood cholesterol levels. From a functional perspective, dietary fiber is described as supporting laxation, attenuating blood glucose responses, and assisting in cholesterol-lowering.
