ABSTRACT

Coriander (Coriandrum sativum L.) is a very significant horticultural plant and consequently is of great commercial interest. Coriander is an annual herbaceous medicinal plant that originated from the Mediterranean and Middle Eastern regions. The root, stems, leaves, and coriander fruits are used in spices, flavor, food products, and folk medicine.  In addition, due to the antibacterial, antifungal, and antioxidant properties, the seeds are also used in cosmetics, plastic, nylon, bio-fuel, surfactants, and emulsifiers due to the presence of different biochemical compounds. Based on these potentials, coriander seeds have marvelous prospects in many non-food-associated applications. This book chapter explores the potential of coriander seeds and leaves as a non-food material.
